I truly hope y’all enjoyed your Thanksgiving holiday, and that you all ate to your heart’s content! Now that the holiday is gone, I’m sure most of you have fridges full of leftovers.
But leftovers don’t have to be boring! There’s SO many things you can do with your leftover ham or turkey. Today I’m going to share one of my favorite ways to use up my leftover turkey breast:

It’s like having a healthier version of the holiday. Kind of like if Thanksgiving had a healthy sandwich – this would be it. I grabbed my extra apples I had on hand from when I made homemade apple pie, threw in some walnuts for a crunch, and some Craisins for a little sweetness. Mayonnaise isn’t exactly the healthiest, but I had lots of Greek yogurt sitting in my refrigerator. I was skeptical about using it at first, but after mixing it in, I was pleasantly surprised by the turnout. This actually might be my new favorite way to make chicken and turkey salads.
Try it, and you’ll see what I mean. This salad is high in protein, low in carbs, and also satisfies a little sweet craving from the apples, craisins and yogurt. Don’t forget to add your sage – and if you have fresh sage leaves, chop them up finely and mix them in there. Apples and sage go together like strawberries and champagne.
